Global Bunmei Yanagi Sashimi Knife 1804/270 Blade 27 cm

YOSHIKIN combines the GLOBAL line with a line of traditional Japanese knives: BUNMEI.

The blades are made of molybdenum-vanadium steel with a hardness level of 56-58 HRC (Rockwell scale). They have a special satin finish which helps food detach from the blade itself.

The traditional faceted “Honki” wooden handle allows for a firm grip for precise and accurate cuts.

The fundamental characteristic is the asymmetric sharpening, typical of the Japanese tradition.

The BUNMEI range consists of four basic models made in different sizes: the Usuba knife for cutting vegetables; the Deba knife, the stable and heavy traditional Japanese hatchet with a resistant and wide blade. The front part of the blade is used for precision cuts, while the rear part is used for "striking" to break small bones and/or fish bones; the Yanagi Sashimi and the Taco Sashimi are knives for filleting fish, their long and thin blade allows for very precise cuts.
